What people use it for
The blue in nyonya kueh, pulut tai tai and blue rice, and the colour-change trick in a jug of iced tea with lemon. Also brewed plain, hot or cold.
How to prepare it
Eight to ten flowers in a mug of hot water gives a strong blue in about 3 minutes. For kueh, steep and strain, then use the water.
Keeping it
Airtight and dark. Light fades the blue, which is the whole point of the flower.

Add lemon or lime juice. The colour shifts with acidity and does it instantly.
Does it taste of anything?
Very little, which is why it is used for colour in food and mixed with lemongrass or lemon for drinking.
