About dried huai shan

Chinese yam, peeled and dried into hard white slices. Almost tasteless on its own and slightly starchy, which is exactly what it is there for - it gives a soup body. This pack is 500 g net. At the quantities below that is about 25 pots of soup. That works out at S$4.76 per 100 g.

Also known as chinese yam, shan yao, wai san, 淮山, dioscorea, dried yam slices.

What people use it for

One of the four ingredients in si shen soup, and a standard slice-in for pork rib soup, chicken soup and porridge.

How to prepare it

Rinse, soak 20 minutes, then simmer with the soup for an hour. It does not need to be soft before it goes in.

Keeping it

Airtight and dry. Sulphur-free stock is off-white rather than bright white and can darken slightly, which is normal.

Why is some huai shan much whiter than others?

Bleaching. The packs marked sulphur-free are the duller, more natural colour - that is the trade-off.

How much for one pot of soup?

A small handful, about 20 g, for a family pot of two litres.
