Brewed in a pot or gaiwan and re-infused several times, the way tea is drunk at home and at dim sum.

How to prepare it

About 5 g of leaf to a 200 ml pot. Green and lightly oxidised teas want water around 85C; oolong and roasted teas take it boiling. Short first infusion, longer each time after.

Keeping it

Airtight, away from light and strong smells. Tea leaf takes on whatever it is stored next to.

How many times can I re-brew the leaves?

Three to six, depending on the tea. Oolongs such as tie guan yin and da hong pao go furthest.

Does it have caffeine?

Yes. Anything made from the tea plant does - green, oolong, black and pu erh alike. The flower teas do not.
