About angelica root

Sliced or powdered angelica root, strongly aromatic with a celery-and-liquorice smell that carries through a whole pot. Sold as listed above.

Also known as dang gui, dong quai, angelica sinensis, 当归, chuan xiong, ligusticum.

What people use it for

One of the herbs in a dang gui chicken or mutton soup, and in the standard confinement soup packets. Used sparingly - it dominates.

How to prepare it

Two or three slices for a family pot, added at the start and simmered an hour.

Keeping it

Airtight. The aroma is the point and it fades in an open bag.
