Brewed with chrysanthemum and cassia seed as a sharp cooling drink, simmered into a sweet-sour soup, or used to tenderise meat in a braise.

How to prepare it

Five to six slices per mug, 5 to 10 minutes, rock sugar to taste. For a pot, a small handful to a litre and simmer 20 minutes.
