About dried chrysanthemum

Whole dried chrysanthemum heads that open again in hot water. The flavour is light, floral and slightly sweet, with no caffeine and no bitterness unless it is over-brewed. Sold as listed above, from China.

Also known as chrysanthemum tea, ju hua, kok fa, hong kong chrysanthemum, 菊花, 胎菊, tai ju.

What people use it for

The everyday cooling drink in most Singapore Chinese households, brewed on its own or with rock sugar, wolfberries and dried longan. It is also the base of the hawker "chrysanthemum tea" and of the herbal jelly sets sold at Chinese New Year.

How to prepare it

Rinse once, then use 6 to 8 flowers per mug of just-boiled water and steep 3 to 5 minutes. The same flowers take a second and third pour.

Does chrysanthemum tea have caffeine?

No. It is a flower infusion, not a tea leaf, so there is no caffeine in it at all.

How many flowers per cup?

Six to eight heads in a 250 ml mug, steeped 3 to 5 minutes. Add rock sugar at the end rather than the start so you can taste how sweet it has gone.

Can I brew the same flowers twice?

Yes. Chrysanthemum takes two or three pours before the flavour goes flat.
