About lotus seeds

Dried lotus seeds, pale and firm, with a mild chestnut taste. Skinless ones cook faster; the ones with the green core in the middle taste bitter unless it is removed. This pack is 250 g net. At the quantities below that is about 10 servings.

Also known as lian zi, lin ji, 莲子, gorgon fruit, qian shi, euryale seeds, foxnut.

What people use it for

In sweet soups with snow fungus and red dates, in si shen soup, in mooncake and pastry fillings, and in savoury double-boiled soups.

How to prepare it

Soak 30 minutes to an hour, push out the green core if there is one, then simmer 40 minutes until they give under a spoon.
