About pu erh tea

Fermented dark tea from Yunnan, pressed into small nests, cakes or sold loose. Earthy and smooth, with none of the sharpness of green tea, and it gets rounder as it ages. Sold as listed above, from Yunnan, China.

Also known as puer tea, pu-erh, po lei, bo lay, 普洱茶, tuo cha, ripe puer.

What people use it for

The tea served with dim sum. Drunk plain, or scented with rose, chrysanthemum, orange peel or sticky-rice leaf, all of which One Sunny sells pressed together with it.

How to prepare it

Rinse first: pour boiling water over the leaf and tip it straight out, then brew properly. One nest or 5 g per pot, boiling water, 30 seconds for the first pour and longer each time after. It takes six or more infusions.

Do I need to rinse pu erh?

Yes. A quick pour of boiling water tipped away wakes the compressed leaf up and rinses off storage dust. The second pour is the one you drink.

How many times can I brew one nest?

Six or more. Add a few seconds to each infusion as it goes on.

Does pu erh have caffeine?

Yes, it is a true tea leaf. Roughly comparable to black tea.
