Soaked and used in braises, stir-fries and soup. Cordyceps flower in particular goes into chicken soup and gives it a gold colour.
How to prepare it
Soak in warm water 30 minutes until soft, squeeze out, and strain the soaking water into the pot - it is the best part.
Keeping it
Airtight and dry, or the freezer for long keeping.
