About peach blossom jelly
Hardened amber resin from the peach tree, sold dry as crystals. It has no taste of its own and turns soft and jelly-like after a long soak. This pack is 500 g net, grade A. At the quantities below that is about 42 servings. That works out at S$3.56 per 100 g.

What people use it for
Soaked overnight, picked clean of bark, then simmered in a sweet soup with snow fungus, red dates and rock sugar. It is the crunchy-then-slippery texture in that dessert.
How to prepare it
Soak 10 to 15 g in plenty of cold water for 10 to 12 hours - it swells to many times its size. Pick out the dark bits, then simmer 20 to 30 minutes.
Keeping it
Airtight and dry. Undissolved it keeps for a long time; once soaked, use it that day.

How long do I soak peach gum?
Ten to twelve hours in cold water, or overnight. It will not soften properly in a short soak.
Why are there dark bits in it?
Bits of bark from the tree. They are picked out after soaking, when the resin is soft and they lift away easily.
