About dried huai shan

Chinese yam, peeled and dried into hard white slices. Almost tasteless on its own and slightly starchy, which is exactly what it is there for - it gives a soup body. This pack is 200 g net. At the quantities below that is about 10 pots of soup. That works out at S$3.12 per 100 g.

Also known as chinese yam, shan yao, wai san, 淮山, dioscorea, dried yam slices.

What people use it for

One of the four ingredients in si shen soup, and a standard slice-in for pork rib soup, chicken soup and porridge.

How to prepare it

Rinse, soak 20 minutes, then simmer with the soup for an hour. It does not need to be soft before it goes in.
