How to prepare it
Most beans want a rinse and a soak of 4 hours or overnight, then 45 to 90 minutes of simmering. Small grains such as millet and quinoa need no soak and cook in 15 to 20 minutes.
Keeping it
Airtight and dry, away from heat. In Singapore, an airtight jar rather than the bag - grains draw weevils.

Do I have to soak them?
Large beans yes, overnight or at least four hours. Small grains such as millet, quinoa and buckwheat do not need it.
How should I store grains in Singapore?
Airtight, and the freezer for the first few days if you buy in bulk. Humidity and weevils are the two things that spoil them.
