About preserved kumquat
Whole kumquats preserved in sugar and dried until chewy, or sliced and freeze-dried. Sweet with a citrus-peel edge. Sold as listed above.
Also known as gam gat, ju bing, preserved kumquat, 金桔, candied kumquat, kat chai.
What people use it for
One or two dropped into a mug of hot water on their own, mashed against the side of the cup, or brewed with dried lemon and honey. Also eaten straight as a sweet.
How to prepare it
One or two per mug of just-boiled water, crushed lightly, 5 minutes.
Keeping it
Airtight. The sugar makes them sticky in humid air; a sealed jar is better than the bag.

Are these sweetened?
The preserved and ju bing versions are, yes - sugar is what preserves them. The freeze-dried kumquat slices are not.
