About dried seafood

Sun-dried seafood sold by weight and graded by size, which is what most of the price difference is. Sold as listed above.

Also known as dried seafood, hoi mei, conpoy, dried scallop, hae bee, ikan bilis.

What people use it for

Dried scallop into porridge, steamed eggs and soup; dried shrimp into sambal, rice and stir-fries; anchovies into stock and as a snack.

How to prepare it

Rinse, then soak in warm water 20 to 30 minutes and keep the soaking water - it is stock. Scallops shred with your fingers once soft.

Keeping it

Airtight in the freezer once opened. This is the one category where a cupboard is not good enough in Singapore.

Should I keep the soaking water?

Yes, especially for scallops and shrimp. It carries most of the flavour and goes into the dish.

Fridge or freezer?

Freezer, in an airtight bag. Dried seafood picks up moisture and smell quickly here.
