Edible bird's nest, sold either dried in its raw form or already cooked in bottles. The dried grades differ by shape and how much cleaning they needed. This pack is 30 g net. At the quantities below that is about 6 servings.

What people use it for
Double-boiled with rock sugar, on its own or with American ginseng and red dates. The bottled versions are ready to drink.
How to prepare it
Dried: soak 3 to 4 hours in cool water, pick out any feather, then double-boil 30 minutes with rock sugar. Bottled: ready as it is, warmed or chilled.
Keeping it
Dried: airtight and dry, out of the sun. Bottled: as printed on the bottle, and refrigerate once opened.

How long do I soak dried bird's nest?
Three to four hours in cool water, then double-boil for about 30 minutes. Soaking in hot water damages the strands.
What is the difference between the grades?
Shape and cleaning, mainly. Yan zhan is the whole cup shape, jin si yan is the strand form. Both are the same product cleaned to different extents.
