What people use it for
A spoon of powder in hot water with brown sugar, slices simmered into soup, and both used in baking and in cooking where fresh ginger would burn.
How to prepare it
Powder: a level teaspoon in a mug of hot water, stirred, with brown sugar or honey. Slices: three or four per pot, simmered 20 minutes.
Keeping it
Airtight. Powder cakes badly in humidity - keep the bag sealed and use a dry spoon.
