Dried scallop into porridge, steamed eggs and soup; dried shrimp into sambal, rice and stir-fries; anchovies into stock and as a snack.
How to prepare it
Rinse, then soak in warm water 20 to 30 minutes and keep the soaking water - it is stock. Scallops shred with your fingers once soft.
Keeping it
Airtight in the freezer once opened. This is the one category where a cupboard is not good enough in Singapore.
