About dried mushrooms
Mushrooms dried whole, which concentrates the flavour and is why dried are used in soup where fresh are not. Sold as listed above.
Also known as dried shiitake, flower mushroom, dong gu, cordyceps flower, chong cao hua, tea tree mushroom.
What people use it for
Soaked and used in braises, stir-fries and soup. Cordyceps flower in particular goes into chicken soup and gives it a gold colour.
How to prepare it
Soak in warm water 30 minutes until soft, squeeze out, and strain the soaking water into the pot - it is the best part.
Keeping it
Airtight and dry, or the freezer for long keeping.
Questions people ask
Do I use the soaking water?
Yes. Strain off the grit at the bottom and put the rest in the pot.
Hot or cold water for soaking?
Warm, about 30 minutes. Boiling water is faster but takes some of the aroma with it.
